- 4-5 portobello mushrooms
- 1 whole egg yolk
- 1.5 - 2 tb of Italian breadcrumbs
- a few strips of bacon
- one small onion finely chopped
- spicy pepper jack cheese (a few slices)
- some olive oil for frying (but not much)
- salt and pepper
Wash mushrooms first, then pop put stems, chop them finely and put aside. Brown chopped onions and bacon pieces along with mushrooms stems. Transfer all these ingredients to a bowl. Add egg, breadcrumbs, salt and pepper. Combine and stir all these ingredients. Smear mixture into the cavity of each mushroom. Put some pepper jack cheese pieces on top of each mushroom.
Bake at 356 F (180 C) degrees for 20 to 25 minutes, or until golden brown.
